Lasagna with spinach, mushrooms, zucchini, tofu ricotta, marinara sauce (with some red lentils), and topped by a coconut-based melty cheese and a sunflower seed parmesan. Note that it isn’t yet cooked in this photo :). Will eat this for dinner with my parents tonight~!

Marinara, melty coco cheese, and tofu ricotta made from scratch ^_^ (block of tofu was store-bought though).

I made an apple pie(heart) with McIntosh apples left over from our recent pick, and a millet pie :vegan:
