When I moved to hand grinding, I was shocked at how different the grind experience was for the same coffee in morning Vs afternoon. Atmospheric conditions, particularly humidity, affect grind a lot, with knock on for extraction which is probably where you’re seeing the taste change |

Probably the stress has an influence on the sense of taste, too, other than on a lot of other bodily functions.
