@anna i read an article years ago about how apple put a ton of effort into prioritizing (in the task priority sense) user interaction over everything else, so e.g. if the user is touching a scrollable area, the process responsible for scrolling will get way more CPU time than anything else, so there's never a perceptible lag. It's possible that android has caught up on that, but if not, that kind of thing can make a huge difference in making all apps feel more responsive.
@ranjit @anna it entirely depends on your android device. So on a Google-sanctioned Pixel phone, input lag is pretty much identical to iOS. cheaper devices, not so much.
