I'm making another batch of apple jack. It's a brandy made from apple wine, distilled by freezing out some of the water and retaining the higher-alcohol remains.

@evan interesting! I'm going to be doing my first batch of cider, using the same gear that I use to make sauerkraut and giardiniera in.

@evan It was one of the most popular drinks in Colonial America! Especially when war stopped booze imports from the Caribbean and Europe.
