Beets with mint and yogurt: I think I got this recipe link from @darius. I talked my partner (who cooks for our community) into making it for a meal recently, and it is really ridiculously tasty!

@twistylittlepassages Yeah a lot of people have trouble with the color. If you make it again, try yellow beets, since it just comes out a golden color that way.
