Not having a refrigerator, we've ran out of fresh vegetables many weeks ago, but we've managed to eat well by sprouting fresh microgreens and eating through the pickled vegetables we made over the winter.
We have a month or two worth of pickled cauliflower, and a year's worth of legumes to sprout.
By the fall, I should be able to gather soy, lentils, fenugreek seeds and mung beans from the various gardens we planted.
@neauoire thats really cool, have you been planting out there in the wilderness?
