The Spruce is Loose!

We collected a bucket of spruce buds up north last weekend and I cooked them up to make syrup. It's really nice with some mild turpentine and citrus notes. I was surprised to discover it's very tasty in coffee.

Not sure if this is #woodworking but it is another amazing gift that #trees give us.

@praxeology oh, you have to cook them! I tried eating them raw, but they only tasted very tart 😅

@daniel_bohrer Yeah. Simmer them for about 45 min and then strain through cheesecloth. Followed by about an hour or so further simmering with a huge pile of sugar til it turns kind of pinkish brown. The norwegian advice I was given said I could go a little longer for a darker, more intensely flavored syrup but I was a little conservative since this was my first attempt.
