Examples: floss.social, indieweb.social, tech.lgbt, social.linux.pizza. Without knowing what kind of instance you're looking for it's hard to give specific advice. If you want a well known domain to help boost awareness about codeberg I'd say fosstodon, if you want to help grow a community pick one of the smaller ones.
