@s0 just got Ventoy working here! They don't have a Mac installer, so I put System Rescue on my USB, booted that in copy-to-RAM mode, and then used the Linux installer to turn that same USB into Ventoy.

For whatever reason the "normal" boot method for ISOs doesn't work on my old MacBook Air, but the grub2 option seems reliable.
