@dansup I use the original slow cooker, a cast iron Dutch oven, but the theory is the same. You get so much more flavor development with long, slow cooking. Surprisingly, McGee’s classic On Food and Cooking: the Science and Lore of the Kitchen, has very little on slow cooking, although the section on browning reactions is helpful. I always brown (meat, onions, etc.) at a higher temperature to get those yummy flavors from the Maillard reaction, and then turn the temperature down for long slow cooking to develop the umami flavor.

The reason FediDB counts are different than other sources is because we don't trust nodeinfo stats at face value like every other fediverse stat service does
It's not secret either, just look at how other services report lemmys growth

I'm sorry @dansup but I struggle to read fedidb.org due to low contrast. The dark blue and grey font on dark grey background make fedidb.org very hard to read for me and I've no eye disability. There is definitely an accessibility issue 😢 😞
@dansup does the instances search rely on searching from start of the domain? e.g. I can’t search “.sg” and have all instances that end with the .sg TLD come up, and “sg” doesn’t seem to actually filter much results if any

It seems like removing the Lemmy spam logic in https://fedidb.org led to a few obvious lemmy instances with huge spam counts being treated as accurate.
I wish lemmy got their shit together, not a good look fam
Just going to re-add the lemmy fix, idc if lemmy.ml user count gets treated as spam, this is pathetic.
@dansup Beehaw.org's admins also published a post last week moaning about their suggestions for improvement to Lemmy just not being taken up, and that the Lemmy devs are really slow to improve spam management, etc. Beehaw was contemplating forking off from Lemmy, or starting their own network (hopefully ActivityPub I commented).
